'Working Moms Slow Cooker' Challenge- Day 1: Healthy BBQ Chicken

Today's challenge dinner is Healthy BBQ Chicken.

Ingredients needed:

  • 1 Green Pepper, sliced (about 1 cup)
  • 1/2 Red Pepper, sliced (about 1/2 cup)
  • 1 large Sweet Potato, chopped (about 1 cup)
  • 1 small Zucchini, chopped (about 1 cup)
  • 1 large Onion, chopped (about 1 cup)
  • 1-2 Garlic Cloves, chopped
  • 1 lb Chicken Breasts, thighs or drumsticks
  • 1 Tablespoon, Quick Cooking Tapioca or flour
  • 1-15 oz can of Tomato Sauce
  • 2 Tablespoons of Brown Sugar
  • 1 Tablespoons Worchestershire Sauce
  • 1 Tablespoon Mustard
  •  1/2 teaspoon of salt

You can prepare all of the ingredients the night before and put in the fridge overnight in a gallon size storage bag. You can also double this recipe and put one bag into the freezer for a later time. 

The day you cook this, put all the ingredients into your slow cooker and cook for 4 hours on high or 8 hours on low. You can also add some water or chicken broth to get a little more sauce with it. Serve with rice or pasta. Brown rice or whole grain pasta are good, healthier choices to their 'white' counterparts.

Yum!  I'm going to make this on the weekend.  We often serve rice and pasta. :)

I was all excited when I saw this. then I read the ingredient list.

Sadly most of this stuff upset my nursing baby's tummy.

I am going to hold on to it though. For later hopefully.....

I serve rice less than pasta or potatos because I'm so bad at cooking it, but pasta is a pretty regular side dish in my house.  I might try this recipe, but I usually don't buy those cuts of chicken.

 I will be trying this for sure!  We use rice and pasta almost daily, I've got to cut back!

I wish I could make this, but it just doesn't sound appealing.

I always serve a starch (rice, potato, or pasta usually) every night along with (at least) one green veggie and a lean protein.

This looks yummy!

Rice is a staple in our house. We have close to 500 pounds in our storage.

I don't serve pasta since I'm going wheat free.  I do serve brown rice or sticky rice about once a week.  This recipe looks delicious.

I don't pair pasta as often, and when we do have pasta it's more of the main dish.  Rice more often then I would like.

We use pasta as a main dish most of the time. We use rice with the main dish like baked chicked and rice. I think this recipe may not be so bad.
