'Working Moms Slow Cooker' Challenge- Day 1: Healthy BBQ Chicken

Today's challenge dinner is Healthy BBQ Chicken.

Ingredients needed:

  • 1 Green Pepper, sliced (about 1 cup)
  • 1/2 Red Pepper, sliced (about 1/2 cup)
  • 1 large Sweet Potato, chopped (about 1 cup)
  • 1 small Zucchini, chopped (about 1 cup)
  • 1 large Onion, chopped (about 1 cup)
  • 1-2 Garlic Cloves, chopped
  • 1 lb Chicken Breasts, thighs or drumsticks
  • 1 Tablespoon, Quick Cooking Tapioca or flour
  • 1-15 oz can of Tomato Sauce
  • 2 Tablespoons of Brown Sugar
  • 1 Tablespoons Worchestershire Sauce
  • 1 Tablespoon Mustard
  •  1/2 teaspoon of salt

You can prepare all of the ingredients the night before and put in the fridge overnight in a gallon size storage bag. You can also double this recipe and put one bag into the freezer for a later time. 

The day you cook this, put all the ingredients into your slow cooker and cook for 4 hours on high or 8 hours on low. You can also add some water or chicken broth to get a little more sauce with it. Serve with rice or pasta. Brown rice or whole grain pasta are good, healthier choices to their 'white' counterparts.

We do use a lot of rice and pasta but we switched to brown/whole grain on both so it is healthier for us!

I may try this but I would change a few things, I use only chicken breasts, I would use broth also.. I may not use the peppers I may use a can of tomatoes w/peppers in it for more flavor and more tomatoes and a better sauce I would also add a few spices to it :)

Rice and pasta are staples in my home, but when it comes to BBQ I'll stick to either grilling my meat near baking it. Unless it's rib. Slow cooker ribs are awesome.

9/10 times I serve rice or pasta as a side dish. I may try this for a gathering to let others try it and then I won't feel bad if we don't like it in my house and won't eat it.

Yep, rice and pasta at my house too. I'll also add some barley to a slow cooker meal and it gives the dish a nice nutty flavor. This recipe sounds tasty and easy - two very important things!

We do rice and pasta as a side dish a lot.  The kids love it.  We do pasta as a main course sometimes too.  This recipe looks good!

I'm not to big on bbq flavors, so I probably won't be making this one, we use brown rice or whole grain pasta 4 to 5 times a week
