'Working Moms Slow Cooker' Challenge- Day 4: Sausage and Peppers

Today's challenge dinner is Sausage and Peppers.

Ingredients you'll need:

  • 3-4 Italian Sausage
  • 1 Green Pepper, chopped or sliced
  • 1/2 Red Pepper, chopped or sliced
  • 1 small Red Onion, chopped or sliced
  • 2 cloves Garlic, minced
  • 1 can Italian Diced Tomatoes
  • 1 Tbsp Italian Seasoning

You can prepare this the night before and refrigerate. Put all ingredients in the slow cooker on low for 6 hours. You can make a double batch of this and freeze to use at a later date.

Serve on rolls or with hot noodles with cheese.

My kids would LOVE this, hubby not so much.  Will try this recipe for a lunch instead.

Yummmm!

Nobody in the family has any medical dietary restrictions, but I'm trying to go wheat free for a while to see if it helps with some joint inflammation.

Yes I do have dietary restrictions since my gallbladder was removed I have to watch fat in my diet and red meat is very bad and pork also I buy very lean cuts of all or I use chicken breasts most of the time... I have really bad acid issues and I am on meds for them too, but if I watch what I eat I feel so much better...

Thanks for a great idea! Never thought to do this one!

I make this in the crock a few times a year.  We all love it (except DS, who only eats about 8 things!).  Fortunately, we have no major dietary restrictions in this house, so meal planning is fairly easy.

This looks delicious! Just wish my family would eat it. I have some that won't eat onions and peppers and some that won't eat Italian sausage. Maybe I could leave the onions and peppers out, swap Rotel for the Italian tomatoes, and substitute a Polish or German sausage for the Italian. Could work!

Not sure this one is for us.  less peppers maybe.
