My SD is getting married this Saturday and I'm making a HUGE roaster pan (an electric roaster - turkey size) of veggies. I'm using the frozen bags of broccoli, cauliflower and carrots mix. I have no idea what the best way to do this is. I want to make sure the veggies are cooked completely but I also don't want them to turn to mush either. I made stuffed peppers in the roaster a week ago and they were awful! I cooked them for 3 hours and some were done and some were still hard!  And some were burnt around the edges! I don't want to ruin these veggies. I would be mortified if they turned out awful! So, does anyone know how to cook these in the roaster? I thought about cooking them all seperate on the stovetop then just putting them in the roaster to keep warm but I only have one large pot and I will be all day cooking them in batches on the stove. Any ideas? Also does anyone know how many 16 ounce bags I should get to fill the roaster? I wish I could just do this in the CP but we need huge amounts. Thank You!

 I would do it the way you mentioned. All day and on the stove and then use the roaster to keep warm on wedding day.  Take a bag of frozen veggies, set it in the roaster and guesstimate how many you will need.  Good luck!
