Freezing Bananas

The best way to freeze bananas that I have found is to just put the whold banana, in the skin, in a zip-lock freezer bag. The skin will get completely black in the freezer and look terrible. But just let them thaw in the refrigerator for a couple of hours, or on the counter for about 30 minutes. When you open them up, then will basically pour out of the skin, so have a bowl handy. They are almost mashed up for you. So easy, and so delicious. I have to hunt up my recipes for banana cookies.

Interesting...I've always frozen mine peeled. If it's whole, how do you know if there's a nasty bad spot in the banana when you use it?

You'll more easily see it when you peel it when you're ready to use it. I've tried peeling and then freezing, and freezing in the peel, and I find they maintain their quality better in the peel. If you decide to freeze them in the peel, I'd be interested to know what your opinion is on the two methods.

 If you freeze them in the peel, do they thaw runny, if so, do you use the liquid??

I've always froze mine peeled.  That way I can just thaw them in some warm water and throw them in the mixing bowl, not fuss.  I usualy add some extra flour to make up for the extra liquid they seem to collect.  I use them only in baking so the texture isn't an issue.

I just toss mine in the freezer with peeling and no baggie.  It always works.

Wow with the peeling!  I will have to try that next time.
I peel mine and place them in a freezer bag. I don't bake with them when I freeze them I use them in smoothies. I usely bake with bananas just before we are going to loose them.

This is exactly how I do my bannanas.  I use the liquid in my recipe too.  I've only used it for Bananna Bread and it comes out very moist.

I've tried it both ways, since reading this post..  I find for me, peeling and mashing them is so much faster.  I freeze them mashed in a 1 or 2 cup feezer container or just peeled and into a freezer bag.  For me, it seems much messier to peel the thawed mushy banana.  If it's already peeled I only need to put it in my mixer and the mixer will help mash it up.  I also freeze them in mushed form in one cup measurements.  One batch of bread takes one cup.  I make banana bread often,  so I tend to have alot of banana's going in the freezer at a time.

Thanks for posting this! I had a friend who made banana bread with thawed out bananas and said it was the best banana bread she had ever made! I dont know if it was a coinscidence or not lol.
