Hi, I am not a vegetarian, however, I am not a huge fan of meats other then chicken and fish.  I am 22 weeks pregnant and I am supposed to be eating around 90 grams of protien a day.  If I see anymore hard boiled eggs, or cottage cheese I might puke!  I am a busy girl.  I already have two children and I work.  Does anyone have any quick, child friendly, high protien vegy recipes??  Snak ideas are great too, sonce I mostly have small frequent meals.  Meat has really just been binding me up and making me feel sluggish and yucky in general.  I am limited on the fish since the pregnancy so, I need some ideas!!  Oh ye4ah, and gassiness has been an issue lately as well.

Stick with whole grains (loaded with fiber, like brown rice and quinoa and whole wheat pastas), you should be eating 7 servings a day. Beans and lentis (loaded with fiber and iron). Fruits and vegetables in at least three colors, 7-8 servings a day. And lots of water, at least 8 8oz servings a day.

When I was pregnant, I wasn't worried about protein, but I obsessed about calcium.  Here is great information: http://www.pcrm.org/health/prevmed/strong_bones.html

I have tons of recipes, not sure what you are looking for.  Quick meals for us are bean and sweet potato burritos; salads; whole wheat pasta with frozen chopped spinach, beans, marinara, riccota or tofu or both, and a spinkle of mozarella; whole wheat pasta and broccoli with peanut sauce; lentil sloppy joes (do you have a crockpot); stews and soups with bean or lentils and veggies, taco salad, tortilla pizza (whole wheat tortilla, sauce, broccoli slaw, yves pepperoni, cheese), etc.

Please let me know what recipes you would like, or what your favorite foods are and I can see if I have healthy versions.

This is one of those recipes that has been bouncing around recipe exchange groups for at least three year. I make them and don't bake them; I wrap them individually in wax paper, and stick in a big zipper bag in the freezer. They can be safely microwaved in the wax for a quick meal or snack.

Sweet Potato Burritos
3 teaspoons olive oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained (you can use any bean, canned or home cooked. I use home cooked black beans. One can = 1.5 cups)
2 cups water (I use veggie broth if I have it)
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce or tamari or braggs
4 cups cooked and mashed sweet potatoes
12 whole wheat tortillas, warmed
shredded cheese

Preheat oven to 350 degrees. Heat oil in a medium skillet, and saute onion and garlic in until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat,
and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style. Bake 10-12 minutes.

I love rice, too! When I was pregnant I had a bowl of brown rice with Braggs and steamed veggies almost every day for breakfast.

Here are a couple of good rice salads (rice, cold, healthy!)

Brown Rice Salad with Citrus-Thai Basil Vinaigrette
2 cups cooked brown rice
2 carrots, grated
1 cup pea pods, thinly sliced on an angle
1 small red onion, halved and minced
6 green onions, thinly sliced on an angle
Citrus-Thai Basil Vinaigrette, recipe follows
Chopped fresh cilantro, Thai basil, and/or mint leaves, for garnish
Combine rice and vegetables in a large bowl. Add the vinaigrette and stir to combine. Let the salad sit at room temperature for 30 minutes before serving. Garnish with desired herbs.
Citrus-Thai Basil Vinaigrette:
3/4 cup orange juice
1/4 cup lime juice
1/2 cup fresh Thai basil leaves, chopped (substitute regular basil or mint leaves if needed)
1 cup fresh cilantro leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 heaping tablespoon honey
1/2 cup canola oil
Combine all ingredients in a blender and blend for 1 minute NOTE: Add some chopped kale or other iron rich green; the vitamin C from the orange juice increases the abosorption of the iron.

This is complete nutrition in a (big) bowl: Mixed Bean & Brown Rice Salad
Cooked Brown rice
19 oz can Red Kidney Beans, Rinsed & drained(you can use any bean, canned or 1.5 cups home cooked)
2-19 oz cans Mixed beans,Rinsed & drained (again, any bean, canned or 3 cups home cooked)
3 Celery stalks, chopped
3 Green onions chopped
1/2 Red onion, chopped
1 Red pepper
2 or 3 Garlic cloves, minced
2 or 3 Fresh Tomatoes, chopped
Salt, Pepper & Cayenne Pepper to taste
Juice from one small lime
Vinaigrette Salad dressing, any kind you like.
2 to 3 tbsp. Balsamic vinegar
Make as much brown rice as you would like, let cool. (I also throw in fresh baby spinach or baby romaine)
In a large bowl mix the beans, vegetables, garlic, salt and peppers. Add as much rice as you like. Begin with adding 1/2 cup vinaigrette salad dressing, and add more if you prefer. Add the balsamic vinegar. Refrigerate for at least one hour.
