anyone have a mind-blowing recipe for spaghetti sauce? I really like mine sweet and tomato-y, and would like to make my own this year.
The secret to great sauce is to use great tomatoes. I rarely make my own, and I only make it with fresh picked vine ripened tomatoes. I don't use a recipe, I make it to taste:
In a stockpot, saute a diced onion and 2-4 cloves of diced garlic in olive oil. Use a good, rich olive oil. When they start to soften, add mushrooms (a pound, chopped). cut up the tomatoes, and carefully pull out the seeds (less you have a tool that seeds tomatoes); I do this on a grooved board over a bowl, so I don't lose any juice. The seeds will make your sauce bitter. Throw the tomatoes in the pot, and season with oregano, basil, a grind of pepper and a pinch of good salt. Let simmer over low heat for a couple of hours, stirring occasionally to make sure nothing sticks. Add water or veg broth if needed. Taste and adust seasonings; it may need a bit of sugar to cut the acid. It may need a can of tomato paste to thicken and sweeten it.
