Cooking with freeze dried fruit

Does anyone have any advice on cooking with freeze dried fruit? We ordered a couple #10 cans of peaches and DH wants me to make a peach cobbler for him.

  •  I haven't used any of mine yet, I don't want to open them until I HAVE too, since they were so pricey.  But, in a few years when it's nearing the expiry date, I'll open up a can.  Or before that if we NEED it.  Anyway, what I would do if I were going to make a cobbler, is to rehydrate them in water (the can should have directions) and then just go from there, as if you were using canned or fresh fruit.  I plan on mostly eating our freeze dried fruits right out of the can.  Lots of people say they are best that way.  But, I'll also probably make muffins, pancakes or breads with some of the fruit, just not rehydrate the fruit first.  Oh, and I'll probably rehydrate apples to make pies out of them.  Let me know what you decide to do and how it worked for you, I'm curious.  :)

  • DH always has to open things up and try them. Also, they make a good snack for DS and DD. Everything is a 30-45 min. drive away so I can pack some freeze dried fruit and cheerios and give them to them as a snack instead of getting french fries from a fast food place. We use to get those Gerber toddler snacks but it's much cheaper to do the #10 cans. I like to put some fruit on my oatmeal in the morning too. The peaches are a little strong to eat straight. At least for my taste.

  • Ok, I attempted peach cobbler and it looked horrible but it tasted ok. The fruit just didn't rehydrate as well. I'm going to try and do some research to see how I can improve on it.

  • How did you rehydrate? I have never done it but I remeber reading where you use boiling water. Is that what you did?

    The instructions on the side said to use warm water but today I tried boiling it for a min and then letting it soak for a couple hours before making the cobbler. It was almost all eaten after dinner.
