) A week after I had baby, the turkeys went on sale and I got the last two.
I know that cooked turkey does not keep a long time in the freezer so I was wondering what your family likes made out of the leftovers. I have a few things I make but will wait to see what you ladies post.![]()
If you store the cooked turkey in good freezer bags or food saver bags it will keep about a year in the freezer. I used to buy 10 - 12 turkeys this time of year and cook them up then freeze the meat to use in casseroles, gravies or soups.
Here are my ideas:
Stir fry
Open face turkey sandwiches
Turkey & gravy over biscuits or potatoes
Pot pie
Turkey tetrazzini
turkey & stuffing casserole
Turkey ala king
Turkey quesadillas
Turkey stew & dumplings
Pretty much use it in any recipe calling for cooked chicken, like chicken salad, chicken chili, chicken lasagna, etc.
Really?? I heard for years that they were only good frozen(cooked) for 3 weeks!

Most of the sites I consult say 4 months, but I know from experience that it will keep longer, especially if it's sealed in good plastic bags with no air. It will not spoil in the freezer. Freezer burn is what will keep it from being good and that can be alleviated by using thicker storage bags or even double bagging it. It will also tend to dry out a bit more the longer it's in the freezer, which is why I use it in a lot of casseroles/stews/etc.

i never heard 3 weeks. Always 6 mo to a year. Most things don't go "bad" in the freezer they are just less good. If that makes sense. I have cooked things after they have been in the freezer for a long time. But always your best judgement.
I make casseroles, soup, and this year I am going to try to grind up some turkey meat to use in tacos, burgers, etc... we'll see how that goes.

I always get my turkey and then go home to Mom's for the holiday. I have the butcher cut it in half. I take off the wings and legs/thighs myself and make a good stock for soup, then I take the meat off the bones and make turkey pot pie and turkey salad. and that is just with 1/2 of my turkey, the other half I take the breast meat off the bone and slice it thin, brown it and make a lemon/butter/white wine sauce for it with mushrooms. Not hard to do at all and if you don't cook with wine don't worry about it. If you want more sauce, add a little bit of broth to it. I do make a lot of pot pies though, it can go far that way.

Turkey and Stuffing Casserole
Turkey to cover bottom of casserole dish
Frozen or canned Veggies ( I like peas or peas and carrots, you could also use green beans or mixed veggies. Whatever you have is great!)
There are two ways to do the sauce
Cream of mushroom/ sour cream or milk or leftover gravy
Cover top of veggies with cream of mushroom or gravy
top with left over stuffing or make stove top but don't cook it first just add the water and throw on top.
Bake on 350 until warm and bubbly
Hawaiian Haystacks:
Rice
Turkey and gravy mixed together warm
Top with any of these toppings or any of your favorites
peas
tomatoes
diced celery
green onions
bell peppers
pineapple tidbits
sunflower seeds
coconut
water chestnuts
Chinese noodles
shredded cheese
These are fun because everybody gets to make their own!

I knew a lady at church in NY that canned turkey and it was wonderful. I just don't know how she did it (I didn't have a pressure canner so I never had her teach me and now I regret it). If I don't get a canner for Christmas, that is going to be my next personal goal to acquire. Then I will try to contact her and find out how she does it. LOL
