You need to marinate the meat 3-4 days- less works too, but longer tastes better.You need:1 onion, sliced2 cups of vinegar2 cups of waterWhole black Peppercorn1 Bay leafPut it all on a pan and boil it for about 5 min, then pour it over the meat.Depending on the weight of the meat you use more or less of the ingredients. If you don't like it soooo sour, use less vinegar- it's too sour for me, so I use 1 c. vinegar on 2 c. water.After 3-4 days brown the meat on all sides in a pot. Add the onions from the marinade and brown those too. Then add some water and simmer it for 2 hours or until well done. Use some of the marinade to make the sauce.For the sauce:Take the meat out of the pot. Stir in some flour add as much of the marinade as you want and salt/ pepper to taste.Goes well w/ Spaetzle, mashed potatoes and vegetables
