I had that issue, and it seemed to get better when I added more fat/dairy in to my diet. I haven't pumped in a while, but am starting again.
The blue color doesn't indicate that its only foremilk, blue is a very natural color for breastmilk. And the baby's poop will be mucousy if there is an imbalance. I know everyone talks about foremilk and hindmilk, but what I've read says that foremilk and hindmilk are actually mixed and you are constantly producing both. Pumping longer won't fix the imbalance. I suppose that if you really think there is an imbalance that you could dump what you pump first couple of minutes and see how that works. How old is your baby? Are they having tummy troubles or is the poop the only thing concerning you? Do they eat anything besides just milk right now. Even rice cereal mixed in the milk can make the green color.
