I am a vegetarian, but not vegan. I do eat eggs, yogurt, milk, cheese, but NO meat. I like scrambled eggs on a whole wheat light english muffin for breakfast and LOTS of salads and homemade soups. I made the most delicious "Olive Garden" minestrone yesterday. Perfect day for it in the Northeast too.
