This is supposed to be called chicken redondo, but I make it so much I had to change the name...I use mild salsa for the kids--they love it!

5 points PER SERVING

3 oz. boneless, skinless chicken breast
adobo seasoning (any variety)
salsa (any jar kind is fine)
1/4 c. reduced fat shredded cheddar cheese

Preheat oven to 375
coat a skillet with cooking spray (preferably a skillet that can also go into the oven)
sprinkle adobo on both sides of chicken and cook chicken until brown on both sides.
Spoon salsa (as much or as little as you like) onto the chicken and put in the oven for approximately 20 minutes.  Add shredded cheddar cheese the last 5 minutes.

This is really good when served with yellow or spanish rice.
