Easy stir fry... you pick the meat or keep it vegetarian.

I love whipping up this easy meal.  Everyone loves it and my husband thinks I am just amazing because I can "cook" a foreign cuisine.  lol  It's also ver versitile.  I've been known to use chopped up chicken nuggets or last nights baked chicken in a pinch.

Ingrediants:
1 bag of stir fry veggies (frozen with sauce)- or -
Asian veggie mix in the freezer section 

White Minute rice


Pre cooked chicken breast -or-
Chicken breast cubed

Directions:
Add a small amt of oil (2tbs) to wok or skillet
Completely Cook chicken breast, seasoned to taste, in large skillet or wok untill no longer pink
( I got a wok as a wedding present and it was the best gift ever!)

Add asian veggies (According to cooking directions)

In a separate pot, boil water, according to instant rice directions.
(You can use regular rice, it just tkes 25 min compared to 5)

Add veggies to rice bed in a deep bowl.  Serve with chop sticks for extra fun. 

Also goes great with an asain salad.  (Spring mix bagged lettuce with snap peas ;you can get them by the handful in the produce section of your grocery store, canned mandarin oranges, red bell pepper if you have time and sliced almonds.  Top with Newmans Asain Salad dressing)
