Hi Ladies! It's been a while since I stopped by. (My bad!) My sister made this dish I'm about to share and gave me a small bowl. I love ALL DISHES Italian and this one is SO YUMMY! I made it last night and the only change I made was, I used the mini bow-tie pasta instead of the regular size. I like it better. Here goes........
SUNDRIED TOMATO PESTO W/BOW-TIE PASTA
1 lb. pkg. of uncooked bow- tie pasta
1-oz. jar sundried tomatoes in olive oil
8 ozs. peppered bacon (this is equally good with chunks of hard salami or summer sausage)
1-10 oz. jar basil pesto
1 cup grated romano cheese
coarsely ground black pepper
Cook pasta according to pkg. directions. Drain tomatoes, reseving some of the oil. Cut tomatoes into thin strips. (The ones I bought were already cut into thin strips) Cook bacon in a large skillet over medium heat until crisp. Drain & crumble.
Drain pasta, shaking off excess water and place in a large bowl. Add tomatoes & pesto, mix well. Add bacon & cheese and toss well. For a moister consistency, add some of the reserved olive oil from the tomatoes. Season with black pepper. Serves 12.
And "Ooh la la", you've got yourself a delicioso salad!
