Ingredients

  • 4 Tyson® Fresh Boneless Skinless Chicken Breast Halves
  • 1/4 cup shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons ground walnuts
  • 2 tablespoons olive or vegetable oil
  • 1 cup cinnamon applesauce
  • 1/2 cup chopped sweet red pepper
  • 2 tablespoons diced green onions
  • 1 large tart green apple, cored and diced
  • Red or green apple slices, optional

Directions

  • Cut a slit in the side of each breast to form a pocket. Stuff each pocket with 1 tablespoon cheese; press to close. Combine salt, pepper and walnuts; coat each breast with mixture. Heat oil in a heavy skillet. Cook chicken for 4-5 minutes per side or until internal juices run clear (temperature should read 170°). Remove to platter; cover and keep warm. In a small saucepan over medium heat, combine applesauce, red pepper and green onion; heat through. Stir in diced apple. Spoon apple mixture over chicken. Garnish with apple slices if desired. Yield: 4 servings.

    Preparation Tips: While grocery shopping, slip packages of chicken into plastic bags to prevent juices from coming in contact with other groceries. Chicken should be thoroughly rinsed and dried with paper towels before it is cooked. Remove visible fat prior to cooking. Wash your hands with hit, soapy water after handling uncooked poultry. It's best to clean anything the poultry touched with an antibacterial cleaner.
