This recipe is from Flagler's at Casa Marina in Key West, Fl. I was fortunate to get the recipe from their pastry chef, and broke the amounts down so that I could prepare just one at home. Scrumtpious.
Macadamia Nut Chocolate Cream Cheese Pie
1/2 pkg. oreo cookies, crushed
3 oz. macadamia nuts, chopped fine
6 Tablespoons melted butter
Preheat oven to 350. Mix all ingredients together. Press into a 9" pie plate. Bake at 350 for 5 minutes. Cool.
8 oz. cream cheese
3/4 cup sugar, divided (1/2 cup & 1/4 cup)
2 teaspoons vanilla extract
2 egg yolks
6 oz. semi-sweet chocolate, melted
4 egg whites
6 oz. macadamia nuts, chopped
16 oz. whipped dairy topping (Cool Whip)
Mix cream cheese, 1/2 cup sugar and vanilla with electric mixer until smooth. Slowly add egg yolks, one at a time, then melted chocolate and blend till smooth.Set aside. Whip egg whites and slowly add 1/4 cup sugar into it to make meringue. Gently fold chocolate mixture into meringue. Fold macadamia nuts, then dairy topping. Refrigerate until mixture sets up, then spoon into cooled pie shell.
