Good Morning all! :)
I just came across this cake recipe & wanted to share w/you. I haven't made it yet, but it does sound delicious & "oh so easy"! Here goes:
1 box yellow cake mix (18 1/4 oz)
1 box butterscotch pudding mix (3-4 oz)
1/4 cup vegetable or canola oil
1/2 cup water
1 cup canned pumpkin
2 t. pumpkin pie spice
4 eggs
powdered sugar or whipped cream (opt)
In a large mixing bowl, combine the first seven ingredients. Beat on low speed for 30 seconds; beat on medium for 4 mins. Pour into a greased & floured 10" fluted tube pan. Bake at 350 degrees for 50-55 mins or until wooden pick inserted near the center comes out clean. Cool in pan for 15 mins before removing to a wire rack to cool completely. Dust w/powdered sugar and or serve w/whipped cream, if desired.

Wonder if you could just substitute vanilla for the butterscotch...Just not a fan of butterscotch-The rest of the recipe sounds easy and tasty.

Oh yes, I'm sure you could! Pudding mixes are certainly interchangeable in most recipes. Your suggestion sounds like it would work wonderfully!
Another good example is, recently I made "Punch Bowl Cake" & it calls for vanilla pudding mix. I wanted to try Cheesecake pudding mix instead & we loved it even better! I think I'll be making it w/the cheesecake pm from now on! :D
