Quick and Easy Sopapillas

I know these aren't true sopapillas
But they are a version I found from a Womans Day magazine years ago and love to make every so often

I'll just list the basics-You can make one or a dozen...

Ingredients

-Flour Tortillas (preferably the smaller size ones...Think enchiladas....NOT burritos)

-Pie filling (I like apple and cherry best)

-Light olive oil (doesn't ave to be Extra Virgin and you can use reg Veg oil)

-Powdered sugar for dusting


Place a small amount of pie filling in the middle of a flour tortilla-Roll up like an enchilada,pulling in the sides an rolling so that pie filling is encased in the tortilla and wont leak out

Depending on how many you're making at a time-heat up a small or large frying pan (sometimes I make these as single serve so I just use a small pan)

Heat up a small amount of oil in the pan (bout medium to medium high...I kinda bounce between heat) place the filled flour tortilla SEEM SIDE DOWN into the pan...allow to turn golden but not brown
Flip and allow the other side to turn golden
Remove from pan.place seem side down onto papertowels (if you used too much oil and is oily) and dust with powdered sugar (Or if you do the apple filling-sprinkle with cinnamon sugar)
Serve warm (with a scoop of ice cream even better!!!)

You and I seem to be on the same page this week I made shredded beef taco's for dinner and I was making donuts for desert talking to everyone about how I should have made these instead  :) I just finished harvesting the apple tree's so I guess you know what kind I will be making.
