For some reason I like making pancakes ONLY on sunday...Anyhow-I decided this sunday I was gonna make pancakes adding spiced pumpkin and adding mini chocolate chips.

Besides the typical blueberry and Chocolate chips-What do you like to add into your pancakes???

-pumpkin butter (this is our ultimate favorite)

-apple butter

-bananas and pb

-peaches/peach butter

Really any fresh fruit, or butter I have laying around.  Flax is really good with bananas, but since Josef is allergic to flax, I can't do that anymore :-(  Flax, IMO, gives things a "nutty" taste-so bananas and flax taste like banana bread!

Pecans.  We like cooked apples on top, too.  But the absolute favorite at our house is thin sliced bananas in the batter.  Then, spread the top with Peanut Butter, and syrup!   Mmmmm!!!!!!

DH likes them with cream corn baked in the batter, they're corn fritters and syrup.

Lately we've been making them with fruit topping (pie filling) and whipped cream.  Apple and strawberry seem to be the favorites.

I usually add in fruit preserves or cocoa powder.

Creamed corn sounds good, I will have to try that.

I have done:

  • Cut up bananas
  • mini chocolate chips
  • mini peanut butter chips
  • mini cinnimon chips
  • mini butterschotch chips

Then I have added

  • cool whip out of the can
  • strawberries
  • sprinkles
  • nuts

I make a lot up and then freeze the rest so that we can have them one day during the week too. I put the different kinds of chips in the batter and then cook them up so they kind of melt. My favorite would have to be the peanut butter or the cinnamon ones.
