1- Balsamic Vinaigrette:
Make 1/3 balsamic vinegar to 2/3 EVOO ratio (the fruity kind sold at costco is great).
Smash 1-3 cloves of garlic and finely chop them. (we love garlic), add to the liquid mixture.
Chop 4-6 healthy leaves of basil, and add to the liquid mixture (optional)
Remove the leaves from a sprig of mexican oregano (it is more flavorful), chop and add to the liquid mixture.
mix until all is incorporated and add to taste.
2- Lemon Parmesan dressing
Squeeze the juice from a half of a large lemon and put in a in a bowl.
Add EVOO in the same ratio.
Finely grate parmesan cheese until you reach the desired consistency (I like mine of the thick side.
Dress your salad. :)
