A Few Hawaiian Recipes

I am attending a scrapbooking crop tomorrow that has a Hawaiian theme.  I decided to make Zucchini Bread and Pineapple-Banana Upside Down Cake.  They both seemed to have turned out very well, so I thought I would share the recipes I used.  Enjoy!

Zucchini Bread

3 eggs slightly beaten

2 cups sugar

1 cup oil

2 cups grated zucchini

1 tsp vanilla


3 cups sifted all-purpose flour

1 tsp salt

1 tsp baking soda

2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking powder


Combine first 5 ingredients.  Sift together last 6 ingredients.  Add dry ingredients to egg mixture.  Pour into two well greased loaf pans.  Bake at 325 degrees for 1 hour.


Pineapple-Banana Upside Down Cake

3/8 cup butter

3/4 cup sugar

1 egg

3/4 cup milk

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 mashed banana

1 cup well drained crushed pineapple


1/3 cup butter

2/3 cup brown sugar


Cream 3/8 cup butter and sugar; add beaten egg.  Sift together flour, baking powder, and salt and add gradually with milk to creamed mixture.  Fold in mashed banana.  Melt 1/3 cup butter pour it into bottom of 8" square pan.  Sprinkle brown sugar throughout melted butter.  Sprinkle pineapple into melted butter and brown sugar.  Pour batter over top and bake at 350 for 20-30 minutes.
