My 11 year old is very much into this cars still.  He loves anything to do with Nascar and Monster Jam, so he still plays with his cars and trucks often, but in a more elaborate way than he did a few years ago.

He's still into Nerf guns, well guns of any kind and archery as well.

My boys love Lego's and Nerf guns. My youngest loves the army men kind of toys, and the oldest loves Matchbox cars, and the middle son is into Star Wars action figures.

Ds1 still plays w/ cars/trucks, Legos, and Nerf guns.

Ds2 plays w/ those things as well as his army guys and, occasionally, stuffed animals.

Using my DH as an example I'm going to say no :))

Quoting Barabell:

I don't think boys/guys ever outgrow Nerf guns; do they?

My son still likes his Nerf guns, and he still likes card games like Yu-Gi-Oh and Magic.

Ds1, not really. Ds2 loves magic stuff, legos, puzzles, transformers, lightsabers (as well as ds1), and lots of other stuff- he's 9.
