When it comes to the Super Bowl I'm much more excited about what's going to be going into my stomach than what will be going on out on the field. So I've been prepping and planning a menu that will provide a little distraction from everything that happens between the commercials.
Chicken wings have a starring role in my lineup, because really, what goes better with football than chicken wings? Of course not all chicken wings are created equal, but this recipe for Buffalo-style chicken wings from Featured Dish is nothing short of delish. You bake them so there's no frying to mess with, and they pack a nice powerful kick. Play ball!
Buffalo Chicken Wings
2 pounds chicken wings, separated at joints, tips removed, and rinsed clean
2/3 cup hot pepper sauce
1/2 cup butter
2 tablespoons paprika
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon cayenne pepper
Salt and black pepper to taste (chicken seasoning)
Preheat oven to 400 degrees F.
Cover an entire sheet pan with heavy duty aluminum foil. Be sure to wrap excess around edges. Spray entire surface with non-stick vegetable oil.
Spread chicken wings evenly throughout the pan. Then lightly sprinkle salt and pepper over the wings. Place in oven and allow to cook for 20 minutes. After 20 minutes, turn the wings over, and cook for another 20 minutes.
Meanwhile, preheat a medium sauté pan at low-medium heat. Combine the hot pepper sauce, butter, paprika, salt, garlic powder, and cayenne pepper in the pan. Allow the butter to melt and thoroughly whisk sauce for up to 5-7 minutes.
Once the chicken has finished cooking (the wings should appear lightly browned), remove the chicken from the oven and dump them into the large bowl with the Buffalo Chicken Wing sauce.
Lightly toss with a spatula, making sure to coat all the chicken. WAIT! Do not serve yet! Allow the chicken wings to sit for up to 5 minutes, and then toss again. After that second tossing, NOW you can place the chicken wings on a serving dish.
