The ingredient of the day is CHEESE!!
My daughter does this in another group and I thought it would be a great way for us to share recipes.
I will post an ingredient and you tell me what you can do with it and/or post recipes if you have one you would like to share.

White Cheese Chicken Lasagna |

9 lasagna noodles
1/2 cup butter
1 onion, chopped
1 clove garlic, minced
1/2 cup all-purpose flour
1 teaspoon salt
2 cups chicken broth
1 1/2 cups milk
4 cups shredded mozzarella cheese,
divided |
1 cup grated Parmesan cheese, divided
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
2 cups ricotta cheese
2 cups cubed, cooked chicken meat
2 (10 ounce) packages frozen chopped
spinach, thawed and drained
1 tablespoon chopped fresh parsley
1/4 cup grated Parmesan cheese for
topping |
| 1. | Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain, and rinse with cold water. |
| 2. | Melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in the flour and salt, and simmer until bubbly. Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups mozzarella cheese and 1/4 cup Parmesan cheese. Season with the basil, oregano, and ground black pepper. Remove from heat, and set aside. |
| 3. | Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish. Layer with 1/3 of the noodles, the ricotta, and the chicken. Arrange 1/3 of the noodles over the chicken, and layer with 1/3 of the sauce mixture, spinach, and the remaining 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Arrange remaining noodles over cheese, and spread remaining sauce evenly over noodles. Sprinkle with parsley and 1/4 cup Parmesan cheese. |
| 4. | Bake 35 to 40 minutes in the preheated oven. |
Here we go. I make this for every Thanksgiving and almost every Christmas. It makes a lot, and it's not very good for you, but oh, sooooo yummy!
If you like things a little on the spicy side, you can always add sliced jalapeno to this. I don't add it, because no one else in my likes things as spicy as I do.
1 T vegetable oil
1 pound elbow macaroni
9 T butter
1/2 cup (2 oz.) shredded Muenster cheese
1/2 cup (2 oz.) shredded mild cheddar
1/2 cup (2 oz.) shredded sharp Cheddar
1/2 cup (2 oz.) shredded Monterey Jack
2 cups half & half
1 cup (8 oz.) Velveeta, cut into small pieces
2 large eggs, lightly beaten
1/4 t seasoned salt
1/8 t freshly ground black pepper
1. Preheat the oven to 350 degrees F. Lightly butter a deep 2 1/2-quart casserole.
2. Bring the large pot of salted water to a boil over high heat. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes. Do not overcook. Drain well. Return to the cooking pot.
3. In a small saucepan, melt eight tablespoons of the butter. Stir into the macaroni. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs. Season with salt and pepper. Transfer to the buttered casserole. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining one tablespoon of butter.
4. Bake until it's bubbling around the edges, about 35 minutes. Serve hot.
That sounds so good! Especially with Jalapenos

I like to make a lot of mexican dishes, enchildadas ,bakes, tacos, taco salad, and a dish we love called "almost lasagna"
Almost Lasagna
1 lb ground beef or turkey
1 onion diced
1/2 cup diced bell peppers
cook through. Then add about 1/2 to full box of Penne pasta. Add 1 cup of water. 1/2 cup parmesan cheese, a jar of spaghetti sauce and stir well. Let simmer until noodles are done. Add water if needed. Then I top the whole thing off with a shredded blend of monterey , Colby and cheddar cheese. Sometimes provolone and mozzarella. Put the lid on, turn of the heat and let the cheese melt and become gooey!
I serve this with garlic bread and a salad.
