My husband can actually bake cookies, who'd have thought!
We've been married a long time, and this is the first time I asked for his help with the Christmas cookie baking. I wanted to bake three kinds today, so I mixed, formed and put the first batch in and got the second kind mixed up and asked him to come help (I'd forwarned him.) So he formed them and dropped the jam in (jam thumbprints) while I took the first batch out of the oven and added the ingredients for the third kind, he mixed and dropped those on the cookie sheet while I took care of the other cookies and started clean up. And he did a beautiful job! Sorry I don't have a camera. I never knew he would do so well. :)
We made Russian Teacakes, Jam Thumbprints, and an easy date filled cookie that was my Grandma's recipe that I'll include here.
INGREDIENTS FOR DATE FILLING
2 cups finely chopped dates
3/4 cup sugar
3/4 cup water
DIRECTIONS FOR DATE FILLING
In saucepan cook the ingredients together slowly, stirring constantly, until thickened. Cool.
INGREDIENTS FOR COOKIE DOUGH
1 cup soft shortening (or butter)
2 cups packed brown sugar
1/2 cup water
1 teaspoon vanilla
3-1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/8 teaspoon cinnamon
Mix shortening, brown sugar, and eggs thoroughly.
Stir in water and vanilla.
Sift together and stir in flour, salt, baking soda, and cinnamon.
Drop with teaspoon on ungreased baking sheet.
Place 1/2 teaspoon date filling on dough.
Cover with 1/2 teaspoon of dough
Bake at 375F for 10-12 minutes until lightly browned. Cool on racks.
Makes about 5 dozen cookies.
