Recipe: Mini Crustless Broccoli Mushroom Quiches

Breakfast yesterday morning with the granddaughter!  

These were very good too!  We obviously had a great cooking day!

I will be making these again very soon!



Mini Crustless Broccoli Mushroom Quiches

1 cup egg substitute

1/4 cup fat free half and half

1/4 cup fat free milk

1 stalk broccoli florets

1/2 small can mushrooms

1/2 cup (or so) sharp cheddar cheese

salt

pepper

nutmeg

Preheat oven to 350.

Cut broccoli into small pieces, using only florets and very small stems.  Saute them in cooking spray for a few minutes.

Line muffin pan with cupcake papers, and spray them generously with cooking spray (very generously, otherwise they will stick big time!!!).  

Chop mushrooms.

Mix egg substitute, half & half, milk, salt, pepper and nutmeg in a bowl.  Spoon a little egg mixture into each cup, enough to cover the bottom of each cup.

Divide broccoli, then mushrooms, then cheese among all cups.  Spoon remaining egg mixture into each cup. 

Bake for about 20 minutes.  Check for doneness with a cake tester or toothpick.
