If it is a woman....the first thing I notice is if she is wearing a hat/scarf...or if her visible hair might be a wig. As someone who covers her hair....I look for this to see if I have something basic in common with the other person.
if it is a man....is he wearing a kippah (yarmulke/skullcap) - for the same reason above. Also, does a man reach to shake my hand....something that an orthodox Jewish man would never do.
