going meatless

I'm trying to go meatless once a week. I'm stumped on recipes. I've looked up recipes online didnt find a lot I liked. I was wondering if anyone who had some great meatless recipes they would like to share. I would like to try some with lentils. Thanks ladies for your help.

We just did nachos the other day and instead of meat we crumbled up these Chipolte black bean burgers we'd bought at Costco (Morningstar brand).  They were SO good.  The rest was just the usual, chips, cheese, black beans, black olives, salsa, etc.  Whatever else you like on nachos.

I do stir frys with rice, Mac and cheese, cheese stuffed shells, grilled cheese with tomatoes, breakfast items like eggs, waffles, pancakes and stuff along those lines. I love rice and would love to have it more but I am in a house of meat eaters. None of them are big on veggies and the boys hate rice. It doesn't leave a lot of options.

Going meatless is easy. There are tons of pasta recipes for example. Here are some of my favorites (most of them will be vegan):

We make a bread (it's frozen) and flatten it out and then we put chopped spaghetti with sauce and cheese inside. It gets braided shut and baked. It's pretty yummy.
