Easy Artichoke Dip with Pita Crisps - YUM!

I didn't think I'd care for this but my 21 yr old son made it last night and I couldn't stay out of it!


Artichoke Dip

14 oz. can artichoke hearts, chopped fine

1/2 c. Hellman's mayonnaise

8 oz. cream cheese

1 cup grated Parmesan cheese

2 cloves garlic, minced

Mix all ingredients together (he used a mixer).  Put in a baking dish and bake at 350° for 25 to 30 minutes until bubbly & golden.  Top with a bit more Parmesan cheese before serving warm with pita chips.

Fresh Pita Chips

1 pkg. pita pockets, split & cut like into pie-like triangles (he cut them into wedges, then cut the wedges into wedges.)

Brush with butter (he sprayed with canola oil) and sprinkle with a bit of parsley.  Bake at 350° for 10 to 15 minutes until desired crispness.
