WHOLE WHEAT BROWNIES

[OK, MAYBE NOT HEALTHY, BUT BETTER FOR YOU THAN CONVENTIONAL BOX MIXES!]

4 TBSP cocoa powder
4 TBSP unsalted butter
1/2 cup agave nectar (or 3/4 c brown rice syrup)
1 tsp vanilla extract
2 eggs
1/2 cup whole wheat flour
1/4 tsp salt

Pre-heat to 300 degrees. Grease an 8x8 pan. (Don't use a bigger pan, like I had to, they'll be too thin.)

Melt butter over medium heat and add cocoa. Mix well. Let cool.
Once cooled, add agave nectar or syrup and vanilla.
Mix 2 eggs into mixture, until well mixed.
Add flour and when it's almost mixed completely, add salt.
Don't over mix.

Bake for 20 minutes.

They turned out very good, but I'd do 2 things differently.
1 - Sprinkle dark chocolate chips on top before baking or mix into batter.
2 - Double the batch. hehe

HIDDEN VEGGIE MEATLOAF

1 lb ground beef
1 lb ground turkey
3 stalks celery
3 cloves garlic
1 small onion

8 baby carrots
1 can diced tomatoes [i like fire-roasted]
1/2 cup breadcrumbs
1 egg
salt, pepper, thyme, garlic powder, onion powder, paprika, italian seasoning

Use food processor to chop celery, garlic, carrots, tomatoes, and onion. Mix with all the other ingredients and make into meatloaf shape. Bake for ~1 hour at 350.

I made this last night and it was super yummy!  I'm actually eating leftovers now.  lol

Turkey Goulash

ground turkey

2 cloves garlic, chopped

1 small onion, chopped

1 can kidney beans (I used organic..no salt added)

1 can stewed tomatoes

1 butternut squash, bite size pieces

1 cup (measure dry) whole wheat pasta (I used rotini)

Whatever seasonings you like (I used onion powder, garlic powder, and a pinch of seasoning salt)

* Brown onions and garlic in a small pan and set aside

*  Cook pasta according to package directions

*Brown turkey, drain, and add onions and garlic

*  Combine cooked turkey, onions, garlic, pasta, beans, squash, and seasonings in a large pot.  Bring to a boil and let simmer for about 5 minutes.  Make sure the veggies are tender or to your liking.

This recipe is only about 300 calories for 1 1/2 cups.  Not to mention it's high in fiber!  I was not able to make it with the squash last night, but the next time I definitely will.  I also plan to add other veggies like zucchini.  I hope you enjoy it as much as I did.  Oh yeah..it reheats well!

Easy to Make Cinnamon Apple Muffins

*1 Box of Yellow Cake mix  (make sure it is NOT the mix with the pudding in it)

*8oz of Applesauce (I used lite cinnamon applesauce because it was what I had)

*1 or 2 apple cut up in small pieces(I used Granny Smith because that is what I had, any baking apple will do)

* Cinnamon

1. Preheat oven at 350.

2.Put cake mix in bowl, add applesauce. It will be really thick and hard to stir. Keep stirring it until it looks like a thick cake mix.

2. Add apples and stir them in. Add cinnamon. I wasn't sure how much to add so I added it little by little until I thought it looked and tasted right.

3. Put cake mix in cupcake holders or a greased cupcake pan. 

4. Bake about 30 minutes. They will take longer to bake than the instructions on the box. Check the bottoms of them before you take them out. The tops will look but done but the bottoms may still need to be in the over longer.

5. Enjoy!

 

The cake mix I used had 1170 calories, applesauce had 80, apple has 60. Total calories= 1310, I made 10 muffins, each muffin has 131 calories.

Yesterday I made the best smoothie EVER.

Blend:

1 cup of milk (1% is 110 calories)

.5 cups of fresh Raspberries (45 calories- you can use any berry)

5 ice cubes

.5 cups of Sugar Free Blue Bell Vanilla Ice Cream. (90 calories)

Total: 245 calories

It was SOOOO good. I added sugar free cool whip on the top of mine (30 calories). Loved it!

if your not afraid of carbs...you can try my favorite dish of orzo noodles cooked risotto style.

i start by putting any stock of choice (i like the chicken with less sodium) on the back burner to get to a good boil/simmer

then i dice veggies and saute them in a little bit of EVOO, i have put in mushrooms, green peppers, onions, and i just tried zuchinni - any veggies will work, if you are doing mushrooms saute them first then add your seasonings

once the veggies are sauted, i take the orzo and toast it in the pan.  i don't measure anything, i just try to get a good ratio of noodles to veggies, remembering that the noodles will double in size.

once the noodles are a golden brown, you start to add the stock.  add enough to coat the bottom of the pan, once the noodles have absorbed everything add more stock.  keep repeating this step until your noodles are cooked. 

for extra flavor you can also add cheese

also, orzo makes great mac and cheese

OOOOH! I make really good smoothies. but I dont use milk ice cream or ice. I just use vanilla fat free yogurt whatever berries or fruit. I have a whole freezer full of frozen fruit (blueberries, blackberry, strawberry, raspberry, mango, pineapple). and I add a bit of OJ in there to get it to smoothie consistance...Its YUMMY!!!! and it cuts back alot of calories from the milk and ice cream.

Pumpkin Chocolate Chip Cookies

1 box spice cake mix (just the mix...do not add oil or eggs)

1/2 bag of chocolate chips

1 can pumpkin (I used the Libby's)

 

Mix together and drop rounded spoonfuls on ungreased cookie sheet.

Bake for 8-10 minutes at 425

 

These are super yummy and moist!!!!

I am SO SORRY about the cinnamon.  I just wasn't thinking when I decided to try that recipe.  lol  I'll make you other cookies that don't have cinnamon in them.  : )
