Sunny Side up Waffles

Ingredients:

4 Frozen homestyle or buttermilk waffles

2 containers (6oz each) vanilla thick and creamy low-fat yogurt

4 canned apricot halves

Toast the frozen waffles in the toaster or toaster oven until they are warm. You might have to toast them more than one time.

Carefully remove the waffles from the toaster with the pot holders. Put 1 waffle on each of the plates.

Spoon about half of 1 container of yogurt onto each warm waffle. Smooth the yogurt around with the back of the spoon until it almost covers the top of each waffle.

Open the can of apricots with the can opener. Take out 4 apricot halves. Put the apricots on a paper towel to drain off the juice. Put the rest of the apricots in the refrigerator to use some other time.

Top each waffle with an appricot half, rounded side up.

**These look like fried eggs. Rather than using plain waffles, mix things up by substituting frozen blueberry or apple-cinnamon walffles instead. You could also use peach halves instead of apricot halves. Use your imagination**
