Easy Tostada Pizzas

Ingredients:

1 pkg (9 oz) frozen southwestern seasoned cooked chicken breast strips

1 c shredded Mexican cheese blend (4 oz)

1/2 c thick 'n chunky salsa

1 can (11.5 oz) refrigerated cornbread sticks

Heat the oven to 375 degrees

Put the frozen chicken strips on the microwavable plate. Microwave the chicken on low 2-3 minutes, until thawed. Take the plate of chicken out of the microwave.

Measure out the cheese. Set it aside. Measure out the salsa. Put it in the bowl or dish. Scrape all the salsa out of the measuring cup with the rubber spatula. Put the spoon in the salsa. Set that aside, too. You'll need the cheese and the salsa later.

Remove the dough from the can. Unroll the dough and separate it into 4 rectangles. Each rectangle should be made of 4 strips. Carefully lay the rectangles on the cookie sheet. (You do not need to grease the cookie sheet). Press each rectangle out with your fingers until it is 5 1/2 long and 4 1/2 in wide.

Divide the thawed chicken strips into 4 equal piles. Put 1 pile of chicken strips on each rectangle. Sprinkle cheese on top of each of the piles of chicken.

Bake the pizzas for 15-20 minutes or until the edges look deep golden brown. Carefully take the cookie sheet out of the oven with the pot holders. Use the pancake turner to remove the pizzas from the cookie sheet and put them on the plantes. Serve the pizzas with the salsa.

**Make it Mexican...To add even more South-of-the-border flavor,serve these mini pizzas with tortilla chips and refried beans.  Ol'e!!**
