Dr Pepper cake?

 DH has been wanting to try a Dr Pepper flavored cake and tomorrow is our 4th anniversary, but only the 2nd that we've been able to spend together due the the Army's timing on his schools and deployments. So I'm thinking that I might give it a try. But I don't have a clue what would be a good flavor for the icing/filling . Any suggestions?

Here's some options :)

 

  • FOR THE DR. PEPPER FROSTING:

     

  • 1/2 cup (1 stick) unsalted butter, softened

     

  • 6 tablespoons Dr Pepper

     

  • 3 tablespoons unsweetened cocoa powder

     

  • 1 (1-pound) box confectioners' sugat, sifted

     

  • 1 teaspoon vanilla extract

     

  • 1 cup chopped pecans

     

  • To make the frosting, in a saucepan, combine the butter, Dr Pepper, and cocoa powder. Bring the mixture to a boil over low heat, stirring constantly. Remove the pan from the heat. Gradually stir in the confectioners' sugar until the mixture is smooth, then fold in the vanilla extract and the pecans. Spread over the warm cake.

     

     

     

    ***A Cherry Frosting and filling may inhance the cake flavor also.

    7 MINUTE FROSTING  
     

    1/2 c. Dr. Pepper
    2 egg whites
    1 tbsp. corn syrup
    1 1/2 c. sugar
    Dash of salt

     

    Place ingredients in top of double boiler. Cook over hot water, beating until stiff peaks will form; remove. Beat until smooth. Frosts 2 (9") layers generously. A lovely frosting that stays lovely.

    Maybe a Marshmallow cream and cherry center or Cream cheese with cherry flavoring.

     Thanks. I didn't see these til just now but I'll try them in the future for sure. I ended up using a vanilla frosting and topping it with caramel ice cream sauce in the filling. And drizzled an Dr Pepper/vanilla mixture onto the tops of the layers before I iced them and decorated. Its actually one of the ugliest cakes I've ever done. The colors were all wrong and I rushed thru it so my piping was soooo NOT my best work. But it'll do. And hopefully when we cut into it later today, it'll be pretty yummy. I hope. PHOTO.
