Need some ideas....

The teacher who I work with has a student who's moms foot is broken. The mom has 4 young children all under the age of 7 and husband is stationed in  Cuba for a year.

The teacher and I are planning to do once a week "homemade" meals for the children and the mother.

Does anyone have any ideas what to cook? I'm planning to bring the food in with me to work then later the same day we drop it off to the family.

I might suggest a few things that you can cook in the crock pot and that freeze well.  Then she can pull out meals any night of the week you know?

One is pulled chicken:

Take six chicken breasts, cover with chicken gravy about three jars, add one whole onion sliced, but still bite size sort of like strips, add in one can of mild green chiles and cook on low for 10 to 12 hours then shred - it should fall apart.  When you shred it pour gravy on top of it so that the flavors sink in to the chicken after it has been shredded too.  You will have extra gravy.  I usually divide it all up then into containers and use it as a quick meal choice.  You can use the chicken for enchiladas, burritos, whatever. 

Ugh let me think on another good one that works well on the spot and freezes.  I feel like that movie Steel Magnolias - Daryl Hannahs character says I want it to freeze beautifully!  LOL

pulled pork is another good one,  Take a whole pork loin, cook it in the crock pot for 8 hours or so, add a little water, pickle juice, and let cook. shred it, and add BBQ sauce.

Spegetti sauce is another one that is easy to make and freeze, just don't freeze the noodles.

I'm thinking on some more for you.
