Anyone have any chicken receipies

I have some chicken breasts and want to surprise my husband with something good and healthy.  I know nothing about eating healthy and he is trying to lose weight and I am trying to change the way the family eats.

one thing i've made recently is peanut chicken...

bear with me, it was awhile ago and i didn't have a recipe for it, so my memory is a little sketchy.

first, put some rice on to cook. jasmine rice is the best flavor for this, white rice is fine, but of course brown rice is healthiest, if you can get used to it. also get some spinach ready- nothing fancy, just regular spinach, either frozen or fresh, just NOT CANNED (yuck)

the sauce and meat:

take vegetable broth, soy sauce, peanut butter, a little honey, some garlic powder, and some cayenne pepper, simmer for a while with shredded (or whole, or diced, however you like it), pre-cooked chicken meat

pile the rice on the plate, put some spinach on top of the rice, and put the chicken & sauce over the top. sprinkle with some sesame seeds or crushed peanuts if you want to get fancy.

voila! my version of thai peanut chicken!

sorry about the total lack of measurements... you might want to consult
www.allrecipes.com for an actual recipe. some of the recipes on there will call for vinegar, which i don't use just because i like a smoother flavor, but you might try it if you want to.

This is my most favorite way to cook chicken breasts and it is very low calorie.

Low Cal Chicken Bake

  • 1pkg Good Seasons Dry Itialian Dressing Mix
  • Boneless, skinless chicken breasts with all visible fat removed (the amount is up to you I usually cook between 4-6 breasts)
  • Black Pepper
  • Garlic Salt
Preheat oven to 375
Place the chicken breasts in a baking pan
Sprinkle black pepper and garlic salt over top and bottom of breasts
Sprinkle itialian seasoning over top and bottom of breasts
Bake in the oven for 20-25 minutes
Eat!

I usually make a salad with a bunch of vegetables and also have a side veggie.

The italian dressing mix is 10 calories so combined with the chicken you are looking at a very low cal main dish.

we like to cook up chicken on our indoor grill, or you could bake it as well but for the best flavor try cavenders greek spice, its in the spice isle, get the no salt blend, that way you can add salt to taste that spice blend is the best thing EVER!
