Bean and Veggie Wrap
My 9 year old loves this and it's so fast!
4 fat-free flour tortillas, 2 cups sliced mushrooms, 1 medium onion cut in thin slices, 1 can black beans rinsed and drained, 4 cups spinach leaves, 1/2 cup shredded reduced-fat cheddar cheese.
Heat non-stick pan over medium heat. Cook mushrooms and onions in skillet about 4 minutes, stirring frequently, until onion is crisp-tender. Stir in beans; heat through. Stir in spinach; remove from heat. The spinach will reduce and wilt. Divide the bean mixture among tortillas and sprinkle with cheese. Fold and they are ready to serve. Rarely I will add salsa, but again - Rarely!
