Dark Chocolate Cake

Ingredients

  • 2 cups boiling water
  • 1 cup unsweetened cocoa powder
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/4 cups white sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
  2. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
  3. Bake in preheated oven for 25 to 30 minutes. Allow to cool.

Healthy Peach Cake
Ingredients:
2 1/4 cups (29-ounce can) canned peaches, light-syrup pack, drained and
chopped
1/2 cup sugar
1 cup flour
1 egg
1 teaspoon baking soda
2 Tablespoons vegetable oil
1 teaspoon vanilla
2 Tablespoons brown
sugar, firmly packed
2 teaspoons whole milk
Directions:
1. Preheat oven to 350 degrees F. Lightly grease 8x8 inch pan.
2. Spread peaches in baking pan. Mix remaining ingredients, except brown
sugar and milk, together in mixing bowl; spread over top of peaches.
3. Bake until toothpick inserted into cake comes out clean, about 30 to 35
minutes.
4. For topping, combine brown sugar and milk in small bowl. Drizzle mixture
on top of cake; return cake to oven, and bake 2 to 3 minutes.
5. Cut into 8 pieces

Makes 8 Servings, about 2x2 inch piece each

DOUBLE BUTTERSCOTCH CAKE 

1 sm. pkg. butterscotch instant pudding mix

2 c. milk

1 (2 layer) pkg. yellow cake mix

1 (16 oz.) pkg. butterscotch chips

1 c. chopped nuts

Prepare pudding mix with milk in mixer bowl using package directions. Add cake mix; beat until well blended. Pour into greased and floured 9 x 13 inch cake

pan. Sprinkle butterscotch chips and nuts over top. Bake at 350 degrees for 35 to 40 minutes or until cake tests done. Enjoy.

LUCY'S FRESH APPLE CAKE WITH

BUTTERSCOTCH CHIPS 

 

1 c. oil

3 eggs

2 c. sugar

3 c. flour (plain)

1 tsp. soda

1 tsp. baking powder

1 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

3 c. chopped apples raw (red delicious apples)

1 c. chopped pecans

1 stick butter

1 c. coconut

1 (6 oz.) pkg. butterscotch chips

 

Mix eggs, sugar, oil, butter and coconut. Sift together dry ingredients. Add dry ingredients to egg mixture. Mix well. Stir in apples and nuts. Pour into

a greased 9 x 13 inch pan. Put morsels on top. Bake at 350 degrees for 55-60 minutes.  Enjoy.

DH BUTTERSCOTCH PUDDING CAKE RECIPE 

1 pkg. Duncan Hines yellow cake mix

2 eggs, beaten

1 can Thank You butterscotch pudding

TOPPING:

4 tbsp. brown sugar

1/2 c. chopped pecans

12 oz. butterscotch chips

Mix first 3 ingredients well. Pour into 9 x 13 pan (greased and floured). Mix topping; spoon over cake mix. Bake at 350 degrees for 35 to 40 minutes. Enjoy.
