Mini Whole Wheat Chocolate Chip Banana Muffins

  • Mini Whole Wheat Chocolate Chip Banana Muffins

    48 servings aprox. 45 cals per serving

    3/4 cup all purpose flour

    1 cup whole wheat flour

    1/4 cup sugar

    4 tsp baking powder

    1/4 tsp sea salt

    1/2-1 tsp cinnamon( I used Siagon Roasted Cinnamon)

    pinch nutmeg

    2 ripe bananas, mashed

    2 egg whites

    1 cup 1% milk

    1 teaspoon vanilla extract

    1/4 cup unsweetened apple sauce

    *2/3 cup milk chocolate chips


    1. Preheat oven to 400 degrees. Grease mini muffin pans(I used the baking spray).

    2. In large bowl with fork, mix dry ingredient. 

    3. Mash bananas and set aside.

    4. Mix milk, vanilla, egg whites and apple sauce in small bowl.

    4. Add egg mixture to dry ingredients and mix well. Add mashed banana and mix well.

    5. Fold in chocolate chips.

    6. Fill mini muffin pans 3/4 full(I used atablespoon to make it easy). Bake for 20-25 min or until toothpick comes out clean. 

    7. Remove from pan to wire racks to cool.

I try to turn muffins and such to whole wheat. A lot of times all you have to do is replace at least half the flour with whole wheat flour. I made them low fat by substituting 1 egg with 2 egg whites, and the oil with unsweetened apple sauce.

I'm so glad you posted this.  My daughter is in the healthy eating club at her school.  Once every two weeks they have a meeting and everyone takes a healthy breakfast item.  These will be perfect.

Your welcome! Next time I'm going to use the mini chocolate chips and only use about 1/2 a cup since they are mini muffins. They are perfect for kids. You can actually sneak in veggies. Muffins are fun to play around with.
