The Perfect Meatloaf
Brown Sugar Ketchup Glaze

1/2 cup ketchup
4 tablespoons brown sugar
4 teaspoons vinegar (any type)

Meat Loaf

2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves minced
2 large eggs
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon hot sauce
1/2 cup milk
1 lb ground chuck
1/2 lb ground pork
1/2 lb ground veal
2/3 cup crushed saltine crackers, about 16
1/3 cup minced parsley

For the glaze, mix all ingredients in small pan, set aside. For the meatloaf,
heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic;
saut? until softened, about 5 minutes. Set aside to cool. Mix eggs with salt,
pepper, thyme, mustard, Worcestershire sauce, and milk. Add to meat in large
bowl along with crackers, parsley and cooked onion and garlic. Mix with fork
until evenly blended and mixture doesn?t stick to the bowl. If it sticks add
milk. With wet hands, pat mixture into 9x5-inch loaf shape. Place in foil lined
baking pan for easy clean up. Brush with half the glaze. Bake until crisp,
about 1 hour. Cool at least 20 minutes and serve with the remaining glaze

MINI MEATLOAFS

Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1 cup shredded Cheddar cheese
  • 1/2 cup quick cooking oats
  • 1 teaspoon salt
  • 1 pound ground beef
  • 2/3 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 1/2 teaspoons prepared mustard

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  3. In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  4. Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

MEATLOAF WITH POTATO TOPPING
 
1 tsp. Vegetable oil
3 Green onions, chopped
2 cloves garlic, minced
1 carrot, diced
1 stalk celery, diced
1 Sweet green pepper, diced
1 egg
1/4 cup chili sauce
1/2 cup dry bread crumbs
1 tsp. salt
1/2 tsp. dried basil
1/4 tsp. dried thyme,
1/4 tsp. dry mustard
1/4 tsp. pepper
1 1/2 lb. lean ground beef
 
TOPPING:
 
4 potatoes (about 2 lb./1 kg)
1/2 cup buttermilk
1 T. butter
1/2 tsp. each salt and pepper
 
In nonstick skillet, heat oil over medium heat; cook onions, garlic, carrot, celery and green pepper until softened, 5 to 8 minutes.  Let cool.
 
In bowl, beat egg, chili sauce and 2 T. water.  Mix in vegetables, crumbs, salt, basil, thyme, mustard and pepper.  Mix in beef.  Pat into 9-inch pie plate.  Bake in 350 F. oven for 50 to 60 minutes or until meat thermometer registers 170 F.  Drain off fat.
 
TOPPING:  Meanwhile, peel and cut potatoes into quarters.  In saucepan of boiling salted water, cook potatoes for 15 to 20 minutes or until tender.  Drain and return to pot.  Mash with potato masher; beat in buttermilk, butter, salt and pepper.  Spread over meat loaf.  Broil for 1 to 2 minutes or until golden.  Makes 6 servings.

Barbecue Meatloaf
 
Description
 
Make this tasty meatloaf with ground beef or turkey. You can even mix it up and use pork and veal if you 
like. This recipe is quick and easy and will create a moist, tender meatloaf that is perfect for dinner... and 
sandwiches the next day.
 
Serves: 6
 
Ingredients
 
• 1 minced onion
• 1 1/2 tablespoon butter
• 1 1/2 pound ground beef
• 1/2 cup fresh bread crumbs
• 1 whole egg
• 1/2 cup tomato sauce
• 1 1/2 teaspoon teaspoon salt
• 1/4 teaspoon pepper
 
 
Instructions
 
1. Saute onion in butter until soft. Combine with other ingredients and mix well. Form into a loaf 
and place into a 10"x14" baking pan.
 
2. Pour 1/2 cup barbecue sauce overloaf and bake for 1 hour at 350 degrees F, basting periodically 
with remaining sauce.
 
Notes 
Barbecue Sauce
 
1.5 cups tomato sauce 
1/2 cup water 
2 tablespoons vinegar 
3 tablespoons brown sugar 
2 tablespoons prepared mustard 
2 teaspoons Worcestershire sauce
 
Combine ingredients in saucepan and heat until well blended.

Guy Approved Meatloaf

INGREDIENTS:
1 1/2 pounds ground beef
2 eggs
1 onion, chopped
1/2 cup barbecue sauce
3/4 cup crushed crackers
1 cup crushed potato chips

3/4 teaspoon liquid smoke flavoring
3/4 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon garlic powder
1 pinch cayenne pepper
6 slices bacon

DIRECTIONS:
1.Preheat oven to 375 degrees F (190 degrees C).
2.In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
3.On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
4.Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

APPLE MEATLOAF
 
1 lg onion, finely chopped
1 T butter
2-1/2# ground beef
1-1/2 C. bread crumbs
2 C. apples, peeled and chopped
3 eggs, beaten
1 T chopped parsley
1/2 tsp pepper
1 tsp salt
1/4 tsp allspice
1 T prepared mustard
1/4 C catsup
 
Preheat oven to 350. Saute' onion in butter, then combine with all other ingredients and form into a loaf.  Put the loaf into a greased 10 x 14 " pan and bake for 1 hour.  Let sit 15 min. before serving. Makes 8 servings

Easy Pleasing Meatloaf  
 
2 lb. lean ground beef 
1 pkg.  (6 oz.) STOVE TOP Stuffing Mix for Chicken this provides the
bread and the seasoning
1 cup water 
2   eggs, beaten 
1/2 cup KRAFT Original Barbecue Sauce
 
HEAT oven to 375°F. Mix all ingredients except 1/4 cup sauce.
 
SHAPE into oval loaf in 13x9-inch baking dish; top with remaining sauce.
 
BAKE 1 hour or until cooked through (160ºF).

Rueben Meatloaf

I double or triple this recipe and put into two rolls for the family.  If you love Rueben's this is a winner!!!

Ingredients

  • 1 egg, beaten
  • 2 tablespoons chopped onion
  • 2 tablespoons 2% milk
  • 1/3 pound lean ground beef
  • 1-1/4 cups soft rye bread crumbs 
  • 2 tablespoons Dijon mustard (I use 1000 Island dressing and cover all the ground beef well)
  • 1/2 cup sauerkraut, rinsed and well drained
  • 8 slices deli corned beef (about 2 ounces), divided
  • 3/4 cup shredded Swiss cheese, divided ( I use 1 1/2 c per roll)

Directions

  • In a small bowl, combine the egg, onion and milk. Crumble beef over mixture and mix well. Add bread crumbs; mix gently. On a piece of heavy-duty foil, pat beef mixture into an 8-in. x 6-in. rectangle.
  • Spread mustard over loaf to within 1 in. of edges. Layer with sauerkraut, six slices of corned beef and 1/2 cup Swiss cheese. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends.
  • Place meat loaf seam side down in a shallow 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Top with remaining corned beef and cheese. Bake 5 minutes longer or until no pink remains and a meat thermometer reads 160°. Using two large spatulas, carefully transfer meat loaf to a serving platter. Yield: 2 servings.
