I just replied to your post about gluten free and dairy free substitutions. Substituting eggs can be done, but you need to know what substitutions will work best for each particular recipe. Also, the more eggs a recipe calls for, the harder it is to make proper substitutions. It's best to look for recipes that have very few eggs, or even recipes that have no eggs.
Are you going to be avoiding any other foods besides gluten, dairy and eggs? I can maybe find some recipes that might be helpful for you.

I use a product called Egg Replacer that I buy at whole foods it is a box and it costs $4.99 . It is not cheap but it lasts forever. I have made several things like breads and even pancakes. Before I found out about this powder egg substitute I used to add less eggs than the recipes called for or one with a yolk and the rest egg whites. It worked also.
