High Fiber Muffins

 HIGH FIBER MUFFINS

2 c. unsifted all-purpose flour

1/3 c. sugar

1 tsp. salt

1 tsp. baking soda

1 1/2 c. uncooked quick cooking rolled oats

1 c. whole bran cereal (bran or wheat germ)

1/2 c. raisins or chopped dried prunes or apricots

2 eggs, lightly beaten

1 1/3 c. buttermilk

1/2 c. light molasses

Preheat oven to 350 degrees. In a mixing bowl, combine the flour, sugar, salt, and baking soda. Stir in the oats, bran cereal, and raisins. Combine the

eggs, buttermilk, and molasses. Add to the dry ingredients and stir until the dry ingredients are moistened. Spoon the batter into greased 2 inch muffin

cups, filling each cup 2/3 full. Bake for 15 to 20 minutes or until toothpick inserted into a muffin comes out clean. Makes approximately 12 muffins. Enjoy.

I am wondering for those who are dairy free what could be used in place of the buttermilk.

Maybe the almond milk or coconut milk even??

You can make sour milk, by adding some vinegar to soy milk. I'm not sure if you can use other "milks" to make sour milk, but I do know that it works with soy milk.

Good to know.   My dad avoids cow milk when he can and thought about making these for when he comes out.  How much vinegar per cup of soy milk?

You put 1 tablespoon of vinegar in a measuring cup, then add enough soy milk to make 1 full cup. Stir together, and let sit a few minutes to sour. You may also be able to use lemon juice, but I'm not completely sure. You can use lemon juice when making sour milk with regular milk so it might also work for soy milk.
