Waldorf Salads

Waldorf Salad
6 c. diced apples
3 c. diced celery
1 1/2 c. chopped walnuts
3/4 c. mayonnaise
 
3 tbsp. sugar
1 1/2 tsp. lemon juice
1 1/2 c. Cool Whip
 
Combine apples, celery, nuts, mayonnaise, sugar and lemon juice then mix in the Cool Whip. Chill, then serve.

>2-1/2 lb. roasted chicken

>1 C. celery
>2 med. Red tart apples, such as Rome

>1/2 C. milk

>1/8 tsp. black pepper

>Cook and cool chicken.
>Cut into bite-sized pieces.
>Mix cut up apples, celery and walnuts.
>Mix mayonnaise, milk, salt and pepper; toss all together.
>Place on bed of lettuce.

>8 servings.

Waldorf Salad
If desired, increase seedless green grapes to 1/2 cup and omit the dried
fruit. Or substitute 1/4 cup mixed dried fruit for the raisins.

Start to finish: 15 minutes
Makes: 4 side dish servings

2 cups chopped apples or pears
1 1/2 teaspoons lemon juice
1/4 cup chopped celery
1/4 cup chopped walnuts or pecans, toasted (optional)
1/4 cup raisins, snipped pitted whole dates or dried tart cherries
1/4 cup seedless green grapes, halved
1/3 cup vanilla, lemon or orange low-fat yogurt
2 tablespoons mayonnaise or salad dressing

In a medium bowl toss apples with lemon juice. Stir in celery, nuts, raisins
and grapes.

For dressing, stir together yogurt and mayonnaise. Add dressing to apple
mixture; toss gently to coat. Serve immediately or cover and chill for up to
8 hours.

I dont like walnuts, but I would try the other things
