Strawberry Cheesecake
- Crust:
- One stick butter, softened
- 1/2 cup chopped macadamia nuts
- 7/8 cup flour
- 3 tvs brown sugar
- Filling:
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tbs vanilla extract
- 2 tsp fresh lime juice
- 3 large eggs
- Strawberry Glaze:
- 2 pt fresh strawberry
- 3/4 cup sugar
- 2 tbs cornstarch
- The juice of half of a lime
1. Mix all ingredients in a bowl
2. Place in a 10″ spring form pan
3. Place pan a notch above the middle of the oven
4. Broil until mixture is slightly brown, sitrring often
5. Remove from oven and pat down to make crust flat
***MAKE SURE TO NOT BURN CRUST***
FILLING
1. Beat cream cheese
2. Add sugar gradually, continue beating
3. Add eggs one at a time, continue beating until mixed well
4. Add extract and lime juice.
5. Bake at 350º for 25 minutes
6. Cool to room temperature before adding glaze
GLAZE
1. Place 1 cup strawberries in blender
2. Puree
3. Slice any left over strawberries and place on top of filling
4. In a medium saucepan, add sugar and cornstarch
5. Add strawberry puree and lime juice very slowly.
5. Cook over medium heat until thick.
***DO NOT OVERCOOK***
Pour glaze over the filling, and let chill in fridge for at least 8 hours before serving
