By freezing your own bread dough, you give yourself the ability to make a loaf of homemade bread whenever you wish without having to start from scratch. Make the dough according to your recipe. There is no need to alter the recipe itself, so follow the instructions up to the point where the dough rises the first time.
Punch down the dough after it has risen for the first time. Shape it into your desired form for later. For example, if you want to use it to bake a loaf, shape it accordingly.
Place the shaped dough gently onto a baking sheet; this helps it retain its shape. Place the baking sheet in the freezer and freeze overnight or until solid.
Wrap each piece of frozen dough individually in plastic freezer wrap. Place the wrapped dough into freezer bags and then seal the bags. Return the dough to the freezer and use within three months.
