one of my dhs favorites and can be frozen also. also doubled and tripled!
SLOPPY JOE STUFFED PEPPERS
1 pound ground beef
2 T. onion, chopped,
1 stalk celery, chopped
1 clove garlic, minced
1/2 cup tomato sauce
1 teaspoon granular Splenda
1 1/2 teaspoons white vinegar
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1 c. cheddar cheese, shredded (i add more)
3 green peppers, halved lengthwise
Brown the ground beef, onion, celery and garlic;
drain fat. Stir in all remaining ingredients
except the cheese and green peppers. Simmer 10
minutes. Meanwhile, parboil the peppers in a little
boiling water 3 minutes; drain. Place peppers in a
baking dish. Stir half the cheese into the hamburger
mixture; fill peppers with meat. Top with remaining
cheese. Bake at 350º 15-20 minutes until hot and bubbly
and peppers are tender. Makes 6 servings

THAI MEATBALL KABOBS
Makes: 6 servings
6 bamboo skewers, each 8 inches long
Glazing Sauce
3 tablespoons char siu sauce
2 tablespoons water
1-teaspoon chili garlic sauce
Meatballs
2/3-pound ground beef(sometimes i just use all beef)
1/4-pound ground pork
1/2 cup finely chopped cilantro leaves
2 tablespoons minced shallots(sometimes i just use onions)
1 teaspoon minced garlic
1 teaspoon minced ginger
1-2 fresh Thai chilies, stemmed and minced( i use any chilis i have)
1-tablespoon oyster-flavored sauce
1-tablespoon fish sauce
2 teaspoons soy sauce
2 teaspoons sesame oil
2 teaspoons brown sugar
2 teaspoons cornstarch
1 teaspoon ground black pepper
1 small green bell pepper, cut into 1-inch squares
1 small red bell pepper, cut into 1-inch squares
Cooking:
1. Soak skewers in water for at least 15 minutes.
2. Whisk together glazing sauce in a small bowl.
3. Combine meatball ingredients in a large bowl.
Knead with your hands to mix thoroughly. Divide the
meat mixture into 18 equal portions and roll each into
a meatball. Thread 3 meatballs on each skewer, threading
a red and green bell pepper square between each meatball.
Place skewers in a shallow baking pan.
4. Preheat oven to 400°F. Bake meatballs for 10
minutes. Reset oven to broil. Set pan about 3 inches
from heating element.
Brush meatballs with glazing sauce and broil for about 2 minutes on each side.

Copycat Manwich
1 lb. ground beef

1 c. ketchup
1 Tbsp. dried onion flakes
1 Tbsp. chopped green pepper
1 tsp. salt
1/2 tsp. minced garlic
1/4 tsp. celery seed
1 tsp. prepared mustard
1/2 tsp. chili powder
Brown ground beef. Mix rest of ingredients together and add to browned meat. Simmer for 5 to 10 minutes and serve on toasted buns.
My family always polishes this off!
"Boston Market" Meatloaf
2 lbs ground beef
1 c. tomato sauce
2 Tbsp. barbecue sauce
1 Tbsp. brown sugar
1/2 cup flour
3/4 tsp salt
1/2 tsp. onion powder
1/4 tsp. ground black pepper
2 dashes garlic powder
Combine tomato sauce, bbq sauce and sugar. Add to meat and stir. Add dry ingredients all at once and work it into the meat mixture well with your hands or a wooden spoon. Put into a baking dish. Bake at 350 degrees for one hour. You may top with ketchup before serving.

2 cups nonfat dry milk
1 cup cornstarch
1/4 cup chicken/beef bouillon
2 tablespoons onion flakes
1 teaspoon basil
1 teaspoon thyme
1 teaspoon pepper
2 tablespoons parsley
1 tablespoon garlic powder
Mix and store in airtight container. (I put in gladlock container and
put in fridge)

Serves: 4
1 lb. - Ground Beef
1/2 cup - Chopped Onion
1/4 cup - Chopped Green Pepper
1/2 cup - Ketchup
1/4 cup - Water
1 tsp. - Mustard
1 tsp. - Salt
1/4 tsp. - Pepper
Toasted hamburger buns
Cook ground beef, onion, and green pepper in skillet until lightly browned. Pour off excess fat. Add ketchup, water, mustard, salt, and pepper. Simmer 5-minutes. Serve on buns.

I found this randomly on someone's blog on another site and tried it today---it's was reall good. We added some shredded cheddar cheese on top at the end.
Easy Hamburger and Green Bean Casserole
1 to 1/2 pound ground beef
1 can green beans
1 can cream of mushroom soup
med.-lg. skillet
Brown ground beef thoroughly over med. heat. Drain fat off of meat, add drained can of green beans, and the mushroom soup. Cook over low-med. heat until heated all the way through. Serve this with some bread or biscuits.

Ramen noodle casserole:
- 1/2 lb. ground turkey or beef, browned.
- 1 can cream of mushroom soup,
- 1/2 c. water,
- 1/2 c. milk,
- 1/4 c. diced onion,
- 2 stalks celery, sliced,
- 2 packages of broken ramen noodles
- 1 beef seasoning packet from the noodles.
- Sprinkle with a little soy sauce if desired
- 4 oz. can of mushrooms if you want.
Bake at 350 degrees for 15 minutes, stir the noodles on top into the bottom, bake another 5 minutes.
Pizza Casserole:
1 lb. ground beef
1 large onion, chopped
1 medium green pepper, chopped
1 Tbsp. minced garlic
1/4 c. Parmesan cheese
3 to 6 oz. pepperoni slices, slices quartered
1 4 oz. can mushrooms pieces, drained
3 to 4 cups spaghetti sauce
16 oz. Rotini (spiral) pasta, cooked al dente
16 oz. mozzarella cheese
Grease 9 x 13 baking dish. Cook the ground beef with onions, green peppers and garlic until beef is browned. Drain and add Parmesan cheese. Stir in the pepperoni, mushrooms, and spaghetti sauce until well combined. Simmer for 10 minutes.
Place the cooked pasta in the baking dish. Top with 1/2 the cheese, beef/sauce mixture and the remaining cheese. Bake at 350 for 30 to 40 minutes.
