homemade banana puree

is there any way for me to keep it from turning brown? i know that's just what they do, but not sure if it makes them taste different. i suppose avocados will do the same thing? i plan on trying that next. also, how long will it be okay in the fridge before it needs to be frozen? thanks in advance for your help!

you can add a couple drops of lemon juice to bananas to keep them from turning brown. Don't know if that works with avocados or not though. Hmm...I have no idea how long in the fridge they'll be ok, I just go ahead and freeze. Bananas thaw pretty well.

I agree with the PP...lemon juice will help preserve the color. I froze our purees immmediately, so not sure about how long it will keep in the 'fridge.
