Recipe for an organic no GMO low sugar smash cake possibly with a yam frosting?

oh yes I jsut made one. 


Pumpkin cake: oven at 350           

8 tablespoons (1 stick) unsalted butter, room temperature, plus more for pan

            1 2/3 cups all-purpose flour, plus more for pan

            1 teaspoon ground cinnamon

            1/4 teaspoon ground nutmeg

            1/4 teaspoon ground allspice

            1/2 teaspoon salt

            1/2 teaspoon baking powder

            1/2 teaspoon baking soda

            1 1/2 cups sugar(For Zoe I used ΒΌ c organic sugar and ablout a tbs maple syrup, you could use honey too)

            2 large eggs

            1 cup Pumpkin Puree, or canned (I used a real pumpkin)

                        1/2 cup warm (110 degrees) milk

cook until poker stick think or toothpick comes out clean

 

To make a mini layer cake I used two bread pans for two mini cakes(fri and sun party) and just cut the bread sized cake in half and stacked it. I think you can buy mini cake pans but I didn't want to spent the money so I used what I had.

 

Yummy Yam Frosting

Ingredients

1 cup mashed baked yam

2 ounces softened cream cheese (1/4 cup)

2 teaspoons melted unsalted butter

2 tablespoons maple syrup or brown rice syrup

1 teaspoon lemon juice or orange juice

Directions

Place yams, cream cheese, butter, syrup, and juice in a bowl and cream together.

Puree this mixture in a blender, food processor or with a hand mixer to a smooth, spreadable consistency.


It turn orange-ish so I would use red food coloring for a contrast color...my green was a bad idea.

wholesomebabyfood.com has a bunch of cake recipes for babys first bday and i use the aplesauce spice cake recipe... no sugar at all and delicious!

yeah i didnt even need to add any sugar,,,it was plenty sweet with just the pumpkin.  next time i could do with none or just honey.
