Stuffing/Dressing Recipes

Do you have a favorite family recipe for stuffing or dressing?  Is there a special secret ingredient you use or do you add something a little out of the ordinary?


Our family loves sausage stuffing -

Sausage Stuffing

Preheat oven to 350˚


1 lb  Ground Spicy Italian Sausage

1 TBS  Butter

1 lb  Seasoned Bread Cubes (like Pepperidge Farm - whatever flavor you like)

1 tsp  Kosher Salt

1 ½ tsp  Freshly Ground Black Pepper

2  Eggs, lightly beaten

1 Can Chicken Broth

1 Can Cream of Chicken Soup

6 Stalks Celery, Chopped

2 TBS  Onion, finely chopped


Cook the sausage in a skillet over medium heat until no longer pink and drain; set aside.  Melt the butter in a small skillet; add the celery and onions and cook over medium heat until soft.

In a large bowl, add the sausage, celery, onions, bread cubes, salt and pepper.  Add the beaten eggs and pour in the chicken broth and the soup.   Mix well - stuffing should be moist but not "mushy".

Transfer to a lightly greased casserole dish and bake for 1 hour.

apple sauage stuffing

1 bag seasoned  stuffing cubes, ( no matter what brand ) , 1 lb bulk sweet sausage, 2-3 stalks of celery chopped , 1 med sz onion chopped, 1-2  med - lg  apples peeled and chopped, 1 reg sz can mushrooms, ( can be chopped up if you wish ) , giblets from turkey cookd and  chopped, 1c carrots shredded. In good sz frying pan, sauate onion, celery, sausage , apples, mushrooms til done ( no pink on sausage, chop into sm bits while cooking so it spreads out through the stuffing ) , mix all w/ stuffing crumbs, then take 1 1/2c turkey drippings and add to mix, stir well, if it is still dry somewhat , add sm amounts of  water until desired moisture is reached. bake 350 for about 30 min . * do not be afraid to chop up the tops of the celery, that is where the most flavor is . if do not want to use alot of turkey drippings, add 1/2 c apple juice to mix,

Over the years I have tried many recipes, that I really liked, but my family always asks for this traditional one. This is enough stuffing for a small turkey 11-13 lbs. For a larger turkey, just double amounts. If you end up with more than will go in the bird, just put it in a casserole dish and bake for about 30-45 minutes in a 350 oven.

Turkey Stuffing
1/4 cup butter
1 onion, diced (1 cup)
2-3 ribs celery, chopped (1 cup)
6 cups breadcrumbs (I make my own, but you can use purchased)
1 teaspoon poultry seasoning
1/2 teaspoon sage
Salt & pepper to taste
1 cup chicken or turkey broth
2 eggs, slightly beaten

Saute onions and celery in butter. Add breadcrumbs to a large bowl. Add seasonings and mix. Add onions and celery,broth and eggs.  Mix to combine. Place in turkey cavity or in casserole dish and bake at 350 for 30-45 minutes.

Hi my name is Niki and I am fairly new to the group I have just waited on the right time basically to post. Just sitting back and reading for a bit to feel comfortable. I wanted to know if anyone has a recipe for oyster dressing? I tasted it once and it was VERY good! I tasted it at a relatives house that I am unable to get in touch with because it has been a while. The dressing was very moist and had quite a bit of flavor to it and honestly was the best dressing that I have ever had! I grew up on the traditional homemade dressing and it is good dont get me wrong but I was taken to new levels when tasting the oyster dressing. LOL So if anyone has a recipe for that it would be highly appreciated!

This is my grandma's old fashioned recipe!  Its the bestest dressing I have ever ate!  LOL

**1  1/2 cups cornmeal   **1 cup celery chopped    **8 eggs     **1 cup flour    **large onion chopped   **water     **7 slices of bread    **4 can chicken broth    *2 can cream of chicken soup


Mix cornmeal, flour, celery, onions and eggs.  Add water to a desired consistansy to make the cornbread.  Bake in oven at 450 until done.  After its cooked and cooled some then crumble cornbread up and add broth and soup then the sliced bread.  Mash with potato masher and continue baking at 450 until done.  Not really sure on the times..I usually just watch it.

This is a recipe from Paula Deen.  I haven't tried this particular recipe, but it is very similar to one that my former in-laws from North Carolina make.  You can make the cornbread the day before, but the dressing will be best if baked fresh.  There are other versions that don't use cornbread and some that add ground sausage.  Do you remember any of the ingredients in the dish you tried?


Oyster Dressing - by Paula Deen

1 Cup Self-Rising Cornmeal

1/2 Cup Self-Rising Flour

3/4 Cup Buttermilk

2 Eggs

2 TBS Vegetable Oil

7 Slices White Bread, dried in oven

2 Cups Broken up Saltine Crackers

2 Cups Chopped Celery

1 Large Onion, chopped

8 TBS Butter

7 Cups Chicken Stock

1 tsp Salt

1/2 tsp Fresh Ground Black Pepper

1 tsp Dried Sage

1 TBS Poultry Seasoning

5 Eggs, beaten

2 Pints Oysters, drained


Preheat oven to 350°F.

To make the cornbread: Combine the first 5 ingredients and pour into a greased shallow baking dish. Bake for 20-25 minutes. Remove from oven and cool.

To make the dressing: Crumble the dried white bread slices, cornbread, and crackers. Mix together and set aside.  Sauté the chopped celery and onion in butter until transparent, approximately 5-10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage, and poultry seasoning. Add beaten eggs and mix well. Add oysters and mix.  Pour into a greased pan. Bake for about 45 minutes.
