Hi everyone I am Niki and fairly new to the group and very new to posting! It takes me a while to kind of open up and start talking to mak discussions about anything. I have a question for everyone whomever can help me. I have seen a few different homemade recipes for homemade macaroni and cheese and I am looking for a down home country cookin recipe version. My mom has used like 3 cheeses like velveeta and colby cheese etc in hers and cream milk etc and I know others that use different kinds of cheese.
I cannot call and ask my mom because she will have my bottom for not remembering the recipe over the years and me being 34 she wont care lol So I am calling on all homemade macaroni and cheese recipes that I can get! I am making for thanksgiving next week and cooking myself so I really want this to go off without a hitch. Any and all help is appreciated.

This is how I make macaroni and cheese - you can use whatever cheeses you prefer. If you want to add a 3rd cheese, just use 1/2 a cup of each kind.
Macaroni & Cheese
Preheat oven to 350˚
2 ½ Cups Pasta (something hearty but not too large)
2 Cups Milk
1 Cup Breadcrumbs
4 TBS Butter, melted
2 TBS Flour
3 Eggs, lightly beaten
½ tsp Kosher Salt
½ tsp Freshly Ground Black Pepper
½ Cup Gruyere Cheese, shredded
1 Cup Extra Sharp Cheddar Cheese, shredded
Cook the pasta according to the package directions; drain but do not rinse.
Combine the milk, flour, salt, pepper and eggs in a large bowl; whisk until smooth and well blended. Toss the two cheeses together. Put half of the pasta into the bottom of a lightly greased casserole dish; top with most of the cheese and add the rest of the pasta. Pour the egg mixture over the pasta and cheese. Drizzle with 2 tablespoons of melted butter and top with the remaining cheese. Toss the remaining 2 tablespoons of melted butter with the breadcrumbs and sprinkle over the top.
Bake uncovered for 40-45 minutes, or until melted and bubbly.
